Every cup begins thousands of miles from here — at altitude, in volcanic soil, in the hands of families who have spent generations learning what their land can produce. We source exclusively from traceable single-estate and microlot producers. Direct relationships. No commodity pricing dressed in specialty language.
Each brew method was chosen for one reason: it is the most honest way to present what that origin actually is. Espresso is dialed in each morning — extraction yield measured against a written recipe, grind adjusted for the day's conditions — before the door opens. Nothing is blended into anonymity. Nothing is compromised for the sake of speed.
Everything that is good flows from one source. We built this room with that conviction and made decisions accordingly — white oak hand-planed in Lambertville, linen panels left undyed, lighting held at 2700 Kelvin, sound leveled at 48 decibels and certified there. Nothing was sourced from a catalog. Nothing was accidental.

An acoustical consultant assessed the space before any equipment was purchased. Bose Professional DesignMax system, calibrated to 48 decibels — measured at every table, with the room occupied. Blue Note. Ahmad Jamal. Nils Frahm.
Every source specified at 2700 Kelvin — the warmth of candlelight. Three tiers, four preset dimmer points. The room reads differently at 8am than at 3pm. No fluorescents. Not one.
A certified aromatherapist mapped our roast profiles before composing anything. Cedarwood and beeswax base, calibrated to work alongside coffee's aromatics. Seasonal top notes. All cleaning products vetted. Synthetic fragrance prohibited.
Every seat was occupied for two hours before purchase. If you noticed the chair, it failed. 1.8 lb foam, natural linen, ergonomic height. The communal table is solid white oak, hand-planed in Lambertville.
Ubiquiti UniFi enterprise mesh. Dedicated guest network, isolated from POS traffic. Outlets run to every seating zone during construction — at table height. Stress-tested at capacity before we opened.
